L’inflexion

A one-of-a-kind grand maison in Karuizawa.

L’inflexion, meaning “restraint” in French, draws inspiration from the Japanese culinary philosophy of the “five elements”: five methods, five flavors, five colors, five appropriateness, and five senses. By blending these traditional Japanese principles with the elegance and complexity of French cuisine—and the lightness and richness of nature—our course menu offers a delicate balance of harmony and contrast. Come and experience the refined concept of “restraint” through our signature courses.

Limited-time offer for pistachio stollen until December 17th. Please see the [Reserve] or [Reservation] page at the top right of this page. L’Inflexion’s original Butter Stollen puts the spotlight on pistachios. It is a rich combination possible only at a restaurant, made with 180% pistachio flour and 120% fruit, and we chose maple for the perfect combination. Although it is based in the category of fermented sweets, the process minimizes the use of yeast and places a strong emphasis on maturing the dough. The more bread-like flavor and fragrant pistachio, along with subtle flavors of pink pepper and cardamom, make it one you will never get tired of. Stollen is delicious straight out of the oven, but as you let it rest, the flavor deepens and changes, making it an advent calendar that will get you excited for the approaching Christmas.
